Enjoy an other fast and easy cholcolate temtation by C.A.I-'criminally good food', which it for sure is!

- 2, 5 whole eggs
- 2, 5 yolks, both at room temperature
- 150 g crystal sugar
- 70 g 70%-chocolate
- 40 g 85-chocolate
- 115g butter
- 55 g flour
- 1 can of fat spray (or melted butter; fat spray is better)
First whisk the whole eggs, and then add the yolks and the sugar. Mix them well, but no to foam.
Meantime let the chocolate slowly meld over hot steam; the bowl must not touch the water. Leave the chocolate cool, so that it is still liquid, while being warm.
Pour the melted chocolate into the egg/sugar mixture and add the flour (sifted in order to avoid lump).
You should now have a thick and sticky mass that has to be put into the fridge for around 2 hours.
Now get your molds ready. Cut strips out of baking paper, spray it on both sides with the fat spray and adjust them into the molds.
Put the rings on a heat-resistant tray, coated by baking paper. Make sure the bottom of the rings is also sprayed with fat, so that the fondant does not stick when being taken out.
Tip the fondant batter up to ½ cm under the rings. Heat oven to 180C. Place the baking tray into the oven. The oven has to stay closed as to ensure equal heat everywhere. Cook for 10-12 mins.
The surface should not appear liquid, but it must not have cracks either. You can leave the fondants cool for a minute or two, before serving it on the plate.
Loosen the fondants very gently, easing them out. Carefully place the ice cream on top of the fondant, and then serve immediately.
Serve with mint ice-cream, vanilla ice-cream, or Bailey’s ice-cream. Enjoy the delightful dish!
